Some people like to reduce the amount of peanut butter and/or add more coconut milk.
Before even starting - make sure you have everything you need
If you only have crunchy peanut butter you may want to put it all into a food processor. Double the amounts of the recipe and you can freeze the leftover if you like.
First make sure you have enough room for making this. You might also want to have some things to put on the table or kitchen counter just in case of a mess.

Grab a large bowl and a mixing utensil.
What you'll want to do is mix the peanut butter and water. Keep pouring water until the mix is liquid enough. Once you've done that you want to pour the fish sauce, red Thai curry paste and ginger in that order.
Make sure you're still stirring as it allows the flavors to blend properly. You then want to add the cilantro, lime juice, soy sauce, coconut milk, and garlic. The garlic comes last because of the taste it creates when you put it in.
Stir the mix until it's completely liquid. Make sure to taste it every step of the way.
